Preparing some table olives

Olives for eating and Olives for oil production are different species. Most small family farms like ours have one or two eating olives trees. Eating olives are bigger and have more pulp. Not only are they wonderful providers of antipasti and snacks to accompany a glass of wine, they also have an important role as sentinels for early warnings of olive pests.Best thing is, I get to choose what I add in it.
